Ingredients
- 1 cup oatmeal (80g)
- 2 cups oat flour (180g)
- 4 tbsp Brewer’s Yeast (40G)
- 1 tbsp pumpkin spice (cinnamon, nutmeg & clove powder)
- 1 tsp baking soda (5g)
- ½ tsp baking powder (3g)
- 1 tsp of salt
- ½ teaspoon fenugreek powder (3g)
- ½ cup coconut oil (120g)
- 1 cup pureed pumpkin (240g)
- 1 tbsp flax meal (10g), soaked with 3 tbsp water
Steps:
- Mix the dry ingredients in a bowl.
- Mix the wet ingredients in a bowl.
- Combine both mixtures and continue to mix until a dough is formed.
- Divide the dough into smaller sizes (around 12g per dough). Then, shape them into your preferable thickness.
- Preheat the oven to 180°C for about 10 minutes.
- Bake the cookie dough in the oven at 180°C for 30 minutes.
- Let it cool down and keep it in an air-tight container.
Note: Observe the condition of the cookies from time to time to prevent overcook.
